It was my pleasure recently to get a chance to sit down, and Interview Jason Vernon Food & Beverage Director The Club at Crested Butte
As a member of the Club at Crested Butte – and the Ski Club in Mt. Crested Butte, I have been super impressed with all the quality changes Jason has put in motion for the food and beverage. Especially raising the bar for the level of service we have seen at the Ski Club facility.
This is just the beginning as there are plans to upgrade the kitchen facility with new equipment at both the Ski Club, and the Clubhouse in Skyland. If you are looking for a great Sunday brunch, a gourmet brisket or pulled pork sandwich right from the smoker, or a wedding event with fine dining- with Jason involved at The Club at Crested Butte, it will be first class.

CHRIS KOPF: Hey, it’s Chris Kopf. We’re here in Mt. Crested Butte, Colorado at The Club at Crested Butte – at the Ski Club. I’m here with Jason Vernon, who is the Food and Beverage Director for the Club at Crested Butte. Jason, you’ve done amazing things since you’ve been here. Tell us a little bit first about yourself and what your role is here?
JASON VERNON: Thanks, Chris. I’m kind of steering the ship when it comes to food beverage, and basically being in charge of elevating the program that is here and really building upon the good solid foundation that we have here at the club.
CHRIS KOPF: Well, you’ve done a fantastic job. I was here on a Sunday morning and oh my gosh, there was a chef making omelets and the spread for the buffet was fantastic. And that was just one example of what you’ve done for the food and beverage here at the Ski Club. Tell us about the menu and the offering that you have put in place here?
JASON VERNON: Absolutely. We have a bunch of favorites that are long-term favorites. Like our Easy-Out is one of those things that we just can’t take off the menu. Never would. I think there would be protestors outside if we did.
We are offering more things that are organic, that are sustainable, that are local produce, that are things sourced directly from Colorado, working with our vendors and improving upon the offerings that we have here at The Club by increasing the spread and the depth of these offers.
We can really kind of show off some of our culinary skill, and a little bit of variety for our members.
CHRIS KOPF: Well, that’s awesome. I know there’s been some plans here to expand the kitchen, the food and beverage services, and other things.
JASON VERNON: Yes.
CHRIS KOPF: Can you talk anything about that? Can you talk to that?
JASON VERNON:
Right now what we’re working with is a very good start. It’s a very good base, but we really need to bring in a little bit more equipment so we can have more of a higher end culinary offering – things that are more sauteed and grilled and finished. So this is, you know, not bad where it is right now, but we’re going to bring this up a little bit more and really be able to stretch out the menu and show a little bit of some culinary talent.
CHRIS KOPF: That’s awesome. Well, we’re here at The Ski Club and this is the winter and the ski season. We’re having a great snow day, but in the summer, out in Skyland at the Main Clubhouse, there’s also plans that you have for that facility.
JASON VERNON: Absolutely. As of this afternoon, we’re having our first meeting to improve upon some of the equipment that’s inside that kitchen. We have an approved menu that is coming out that we are going to be starting dinner service in that clubhouse. You’re going to see that Tuesday through Saturday. We’re going to be offering brunch on Sundays. There’s going to be a lot of interesting things, that are going to elevate the entire food experience, from breakfast in the morning to turn to our dinner service, you know, through Fridays and Saturday nights where we’re offering a prime rib special as well. It’s going to be a lot of fun.
CHRIS KOPF: That’s awesome. Well, you know, it really does expand the amenities and the offering to the members at The Club at Crested Butte. And I’m so excited that you’re doing that.
I’ve been a member here for many years and really have enjoyed The Club, but the Ski Club and the things that you’re doing are really elevating the service. Tell us about events. I still have two daughters <who are not married>, and The Club at Crested Butte would be a great venue for either of those daughters <to get married>, hopefully at some point, and the food and beverage is so important in a wedding.
JASON VERNON: Absolutely. It’s a big deal. In addition to weddings We are going to be really focusing on those events that are interactive for our memberships such as wine dinners, where you can come and enjoy a four course meal, that’s paired with wines and then have an ability to purchase said wine afterwards at a discounted rate.
We’re going to be offering, you know special parties… you know, birthday parties, very special events, anniversaries, weddings, things like that for our membership as a wonderful amenity that you can rely on and know that we have great service, great culinary product, a beautiful wine list and something that would make your specific event – very special.
CHRIS KOPF: Okay, great. Well, that’s again another reason with all the changeover with the restaurants in downtown and, I’ve heard from a lot of people, and we’ve experienced, you know trying to get reservations – or there’s a long wait time <to get a table at a restaurant in town>.
JASON VERNON: Sure.
CHRIS KOPF: The other options that you’re providing are a great opportunity for members to utilize the club more.
JASON VERNON: Absolutely, yeah. Utilize the space that you’re a part of, that is part of your family. We really want to grow that outreach to our membership and really kind of let you feel that embrace, that warmth, that it is your club.
And it is a really cool place to come and hang out and have something to drink, and enjoy a fabulous meal.
CHRIS KOPF: Well, great. Well, if you’re considering becoming a member of The Club at Crested Butte, this is just one more reason… the Ski Club and the lockers and parking pass and all the valet services, the skiing and the amenities for the food and beverage here are just one great example of the benefits of being a member and the Club at Crested Butte – and really becoming a big part of the community with expanding the membership so much.
